Honey-Orange Beets

When fresh beets are not available, canned whole beets are a quick and convenient alternative.
Ingredients
- 6 beets 6 6beetbeets
- 1 tsp grated orange rind 1 1tsp tspgrated orange rind
- 2 tbsp orange juice 2 2tbsp tbsporange juice
- 2 tsp butter 2 2tsp tspbutter
- 1 tsp liquid honey 1 1tsp tspliquid honey
- 1/4 tsp ground ginger 1/4 1/4tsp tspground ginger
- pinch salt pinch pinchsalt
- pinch pepper pinch pinchpepper
Preparation
In pot of boiling water, cook beets for about 40 minutes or until tender. Drain and let cool slightly; slip off skins and cube or slice.
In saucepan, heat orange rind and juice, butter, honey and ginger over low heat until butter melts. Add beets and toss to coat. Season with salt and pepper to taste.
