Horseradish Applesauce

Serve this piquant applesauce with cold roast beef, roast pork, sausages, smoked chops or roast goose.

Ingredients

  • 1 cup unsweetened applesauce, (see below)
  • 1/4 cup horseradish
  • 2 tbsp sour cream
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • Salt, freshly ground pepper and nutmeg

Preparation

Combine all ingredients, cover and chill 30 minutes to blend flavours.

Additional information :

Unsweeted applesauce: Wash apples, remove stem and blossom end and chop coarsely. Place in heavy saucepan with orange juice, cover tightly and cook over low heat for 45 minutes or until tender and broken down. Stir periodically. Puree in food mill or press through large sieve to remove seeds and skins.
