Slice pork lenghtwise in half; cut diagonally into 1/2-inch (1 cm) thick slices. In large bowl, combine soy sauce, garlic and 2 tsp (10 mL) each of the lime juice and oil; add pork, turning to coat. Cover and refrigerate for 1 hour. Make-ahead: Refrigerate for up to 3 hours)

Mix remaining oil with lime juice; set aside. Thread 2 pieces of pork onto each skewer. Place on greased grill over medium heat; close lid and grill, turning and basting with remaining oil mixture, until just a hint of pink remains inside, about 8 minutes. Serve with peanuts and lime wedges.

Additional information :

Sweet Soy Sauce:

In saucepan, bring 1/3 cup (75 mL) granulated sugar; 1/4 cup (50 mL) soy sauce; and 2 tbsp (25 mL) fancy molasses to boil over medium-high heat, stirring until sugar is dissolved. let cool. Makes 1/2 cup (125 mL).
