Kale and Cabbage Slaw

Kale is a hearty green that's perfect for marinating. We've included napa cabbage for added crunch, but you can substitute with shredded green cabbage.

  • 2 tbsp 2tbspeach lemon juice, and white wine vinegar
  • 1/4 cup 1/4cupextra-virgin olive oil
  • 2 tsp 2tspliquid honey
  • 1 1clove garliccloves of garlic, minced
  • 1/2 tsp 1/2tspeach salt and pepper
  • 6 cups 6cupsthinly sliced stemmed kale
  • 6 cups 6cupsshredded napa cabbage
  • 1 1red pepper, thinly sliced

In large bowl, whisk together lemon juice, vinegar, oil, honey, garlic, salt and pepper. Stir in kale, cabbage and red pepper; toss to combine. Cover and refrigerate for 4 hours. (Make-ahead: Refrigerate for up to 24 hours.)
