Beer takes on a new role in this sweet sauce served over rich ice cream. Choose brightly coloured, shiny cherries and consider investing in a cherry pitter: It makes for less mess and half the work. This sauce calls for kriek (a Dutch word for cherries) lambic beer.

Ingredients

Method

In small bowl, whisk together cornstarch, lemon juice and 1 tsp water; set aside.

In saucepan, bring cherries, beer, sugar and salt to boil; reduce heat and simmer, stirring occasionally and breaking up cherries with back of wooden spoon, until reduced to 1-1/4 cups, about 20 minutes.

Whisk in cornstarch mixture; cook until thickened, about 2 minutes. Let cool slightly.

Divide ice cream among bowls; spoon sauce over top. Sprinkle with amaretti crumbs.
