Lambic Cherry Ice Cream Sundaes

Beer takes on a new role in this sweet sauce served over rich ice cream. Choose brightly coloured, shiny cherries and consider investing in a cherry pitter: It makes for less mess and half the work. This sauce calls for kriek (a Dutch word for cherries) lambic beer.

  • 2 tsp 2tspcornstarch
  • 1 tsp 1tsplemon juice
  • 2 cups 2cupsBing cherries, pitted
  • 1 cup 1cupkriek lambic beer or fruit beer, (such as Früli)
  • 1/3 cup 1/3cupgranulated sugar
  • 1 pinch 1pinchsalt
  • 2 cups 2cupsvanilla ice cream
  • 1/2 cup 1/2cupamaretti cookieamaretti cookies, crushed

In small bowl, whisk together cornstarch, lemon juice and 1 tsp water; set aside.

In saucepan, bring cherries, beer, sugar and salt to boil; reduce heat and simmer, stirring occasionally and breaking up cherries with back of wooden spoon, until reduced to 1-1/4 cups, about 20 minutes.

Whisk in cornstarch mixture; cook until thickened, about 2 minutes. Let cool slightly.

Divide ice cream among bowls; spoon sauce over top. Sprinkle with amaretti crumbs.
