Little cooks will be a big help snapping or cutting off the stem ends of the beans. Adult help is needed for the boiling and draining.

Ingredients

  • 1 lb green beans, trimmed
  • 1 tbsp butter
  • 1 tsp lemon rind, grated
  • 1/4 tsp salt

Preparation

Fill large saucepan with 8 cups (2 L) water. Cover and bring to boil over high heat. Add 1 tsp (5 mL) salt. Add beans, cover and boil until tender-crisp, about 4 minutes.

Place colander in sink; wearing oven mitts, drain beans in colander. Shake colander to remove excess water. Transfer to serving bowl. Add butter, lemon rind and salt ; toss to coat.

Variations
Lemon Broccoli: Cut florets from stems of 1 bunch of broccoli. Cut florets into bite-size pieces. Peel stems and slice into coins. Cook as for green beans.

Lemon Carrots: Using vegetable peeler, peel carrots. Trim off ends; cut into coins. Cook as for green beans but for 8 minutes.
