Lemon Lime Tofu Zinger

Tested Till Perfect

Servings: 6 to 8

Ingredients:

    2/3 cup (150 mL) each granulated sugar and water
    2 each lemons and limes, grated and squeezed to make 3/4 cup (175 mL) juice and 1 tbsp (15 mL) rind
    1 pkg (12 oz/340 g) soft silken tofu and juice; stir in rind

Preparation:

Simple Syrup: In saucepan, bring sugar and water to boil, stirring to dissolve sugar. Let cool completely.

Wash, prepare lemons and limes and pur?with tofu and juice to make Fresh Fruit Pur? Mix with 2 batches of Simple Syrup.

Freeze in shallow metal cake pan for about 4 hours or until firm. Break into chunks; pur?in food processor. Pack into airtight container and refreeze for 4 hours or until firm or for up to 2 days. (Or freeze in ice cream machine according to manufacturer's instructions.)
