Sweet, lemony custard tarts give you home-baked freshness in minutes.

Ingredients

  • 3/4 cup granulated sugar
  • 2 tbsp butter, softened
  • 1 tbsp finely grated lemon rind
  • 1/4 cup lemon juice
  • 2 eggs, beaten
  • 1 tsp dried mint
  • 12 frozen tart shells

Preparation

In bowl, beat sugar with butter; beat in lemon rind and juice, eggs and mint. Place tart shells on rimmed baking sheet; pour in lemon filling.

Bake in centre of 375°F (190°C) oven for about 20 minutes or until filling is set. Let cool on rack. Make-ahead: Refrigerate in airtight container for up to 2 days.
