Sweet, lemony custard tarts give you home-baked freshness in minutes.
Ingredients
- 3/4 cup granulated sugar 3/4 3/4cup cupgranulated sugar
- 2 tbsp butter , softened2 2tbsp tbspbutter, softened
- 1 tbsp finely grated lemon rind 1 1tbsp tbspfinely grated lemon rind
- 1/4 cup lemon juice 1/4 1/4cup cuplemon juice
- 2 eggs , beaten2 2eggeggs, beaten
- 1 tsp dried mint 1 1tsp tspdried mint
- 12 frozen tart shells 12 12frozen tart shells
Preparation
In bowl, beat sugar with butter; beat in lemon rind and juice, eggs and mint. Place tart shells on rimmed baking sheet; pour in lemon filling.
Bake in centre of 375°F (190°C) oven for about 20 minutes or until filling is set. Let cool on rack.
Make-ahead: Refrigerate in airtight container for up to 2 days.
