Make good use of the summer plum harvest with this subtly spiced compote.
Ingredients
- 1 lemon, scrubbed
- 1 lb plums, quartered (about 3 cups/750 mL)
- 2 tbsp granulated sugar
- 12 peppercorns
- 4 whole cloves
Preparation
Cut ends off lemon; discard. Cut lemon into 1/4-inch (5 mm) thick slices, removing any seeds; place in saucepan.
Add plums, 1-1/2 cups (375 mL) water, sugar, peppercorns and cloves; bring to boil. Cover, reduce heat and simmer until plums are tender, 15 minutes. Let cool. Serve at room temperature, discarding lemon, peppercorns and cloves.
