Be sure to trim the excess fat off the chops, which causes flare-ups that will char them.

Ingredients

  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh thyme, (or 1/2 tsp/2mL dried)
  • 1 tsp grated lemon rind
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 bone-in pork chops, about 1/2-inch (1 cm) thick

Preparation

In small bowl, combine garlic, thyme, lemon rind and juice, salt and pepper. Rub all over chops; let stand for 10 minutes.

Place on greased grill over medium- high heat; close lid and grill, turning once, until juices run clear when pork is pierced and just a hint of pink remains inside, about 10 minutes.
