Lentil and Feta Salad

Plain, boring green salads can cost from $2.25 to $3.50 at the local eatery. This one packs more freshness and is a very high source of fibre and an excellent source of iron, vitamin C and folate.
Ingredients
- 1 can (19 oz/540 mL) lentils or black beans, drained and rinsed
- 1 sweet red pepper, diced
- 1 cup feta cheese, crumbled (4 oz/125 g)
- 1/2 cup diced celery
- 3 tbsp red wine vinegar or white wine vinegar
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/4 tsp hot pepper sauce
- 1/2 cup chopped cucumbers
- 1/4 cup chopped fresh parsley
Preparation
In large bowl, toss together lentils, red pepper, cheese and celery.
In small bowl, whisk together vinegar, oil, garlic and hot pepper sauce; pour over lentil mixture, tossing to coat. (Can be prepared to this point, covered and refrigerated for up to 2 days.)
Stir in cucumber and parsley just before serving.
