Lime Chili Butter

Lime Chili Butter (Served with Grilled Corn)

Ingredients

  • 1/2 cup salted butter , softened1/2 cup salted butter, softened
  • 2 tbsp minced fresh coriander 2 tbsp minced fresh coriander
  • 1 tsp grated lime rind 1 tsp grated lime rind
  • 2 tbsp lime juice 2 tbsp lime juice
  • 1 tsp chili powder 1 tsp chili powder

Preparation

In a small bowl, mix butter, coriander, chili powder,lime rind and lime juice until smooth. Spoon onto plastic wrap; shape into log and wrap tightly. Or pack into small serving bowl, smoothing top. Refrigerate until firm. (Refrigerate for up to 2 weeks).

Meanwhile, Grill husked cobs over medium heat for 15 to 20 minutes; or soak unhusked cobs in water for 20 minutes, then grill for 15 to 20 minutes. Serve with lime chili butter.
