In saucepan of boiling salted water, cook 8 oz (250 g) green and/or wax beans until tender-crisp, 3 to 5 minutes; drain.

In bowl, whisk together 2 tbsp (25 mL) extra-virgin olive oil; 4 tsp (20 mL) orange juice; scant 1/4 cup (50 mL) thinly sliced red onion; and pinch each salt and pepper. Toss with beans.

Makes 2 servings.
