Halve carrots lengthwise; cut into 3-inch (8 cm) lengths.Cut 24-inch (60 cm) length of heavy-duty foil; fold crosswise in half.
Unfold foil; mound carrots and onion on 1 side close to fold. Drizzle with butter; toss with parsley, salt and pepper. Fold foil over; fold in sides and seal to form packet.
Place on grill over medium-high heat; close lid and cook, turning once, until tender-crisp, about 12 minutes. Let stand for 2 minutes before opening. To serve, shake gently to distribute seasonings. Drizzle with lemon juice (if using).
