Sweet, lightly charred carrots are beautifully balanced with a tangy goat cheese yogurt.

Method

Preheat barbecue to medium-high heat (about 375°F); grease grill. 

Halve any larger carrots lengthwise. Place carrots in centre of large sheet of foil. Drizzle with canola oil and honey; toss to coat. Bring together 2 opposite ends of foil and fold down, leaving room inside for expansion; fold in remaining sides to seal. Place on grill; cook, uncovered, until tender, about 10 minutes. Carefully open packet. Transfer carrots directly to grill; cook, turning once, until grill marked, 1 to 2 minutes.

Stir together yogurt, goat cheese, olive oil and pepper until smooth; spread onto serving platter. Top with carrots; sprinkle with salt and pepitas (if using). Drizzle with more olive oil, if desired.
