 This Greek-inspired burger is packed with bold flavours and served on our homemade buns.

Ingredients

  • 3/4 cups 2% Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped mint leaves , divided
  • 2 teaspoons lemon juice
  • 1 clove garlic , minced
  • 450 g ground lamb
  • 1 teaspoon dried oregano
  • 3/4 teaspoons salt
  • 4 The Ultimate Burger Buns (recipe link in Method), split and toasted
  • 24 slices Pickled Beets (recipe link in Method) (optional)
  • 4 cups microgreens
  • 4 peperoncini (optional)

Method

In small bowl, stir together yogurt, feta, 3 tbsp of the mint, lemon juice and garlic until combined; set aside.

In bowl, gently mix together lamb, oregano, salt and remaining 1 tbsp mint just until combined. Shape into four 4-inch wide patties.

Place patties on grill; close lid and cook, flipping once, until instant-read thermometer inserted sideways into patties reads 160°F, about 5 minutes.

Spread half of the yogurt mixture onto bottom halves of buns; top with patties, Pickled Beets (if using), remaining yogurt mixture and microgreens. Sandwich with top halves of buns. Thread 1 peperoncini (if using) onto each of 4 toothpicks; skewer tops of buns.

Makes 4 burgers.
