Adding grated onion to the beef mixture helps keep the koftas moist and tender while grilling.

Method

Preheat barbecue to medium-high heat (about 375°F); grease grill.

In large bowl, stir together beef, onion, allspice, cumin, coriander, cinnamon and 3/4 tsp of the salt until combined. Shape into eight 4-inch long ovals; thread onto 4 metal skewers. Place koftas on grill; close lid and cook, flipping once, until browned on both sides, 6 to 8 minutes.

Meanwhile, place pitas on grill; cook, flipping once, until grill marked, about 4 minutes.

Stir together yogurt, oil, lemon juice, turmeric, sesame seeds, honey and remaining 1/4 tsp salt; spoon onto pitas. Top with serrano peppers (if using), tomatoes, cucumber, parsley and koftas.
