Bursting with fresh flavours and bright colours, this summery main is a shoo-in for weeknight entertaining. Toast the couscous before cooking for a nice nutty flavour.

Method

In saucepan, cook couscous according to package instructions. In large bowl, combine green onions, chives, butter and 1/8 tsp each of the salt and pepper; stir in couscous until butter is melted. Keep warm.

While couscous is cooking, sprinkle salmon with 1/4 tsp each of the salt and pepper. In nonstick skillet, heat oil over medium heat; cook salmon, turning once, until fish flakes easily when tested, about 8 minutes.

In small bowl, stir together mango, red onion, cilantro, lime zest, lime juice, cayenne pepper and remaining salt and pepper.

Serve salmon over couscous and top with mango mixture.
