To save time in the morning, prep and chop all the ingredients for this stew the night before so all you have to do is toss them in your slow cooker and turn it on before heading out the door. Serve with crusty bread for a simple, hearty meal.

Method

In slow cooker, combine kielbasa, carrots, celery, onion, lentils, pancetta, thyme, garlic, bay leaves, salt, pepper and cayenne pepper; stir in broth and 2 cups water. Cover and cook on low until lentils are tender, 7 to 8 hours.

Discard thyme sprigs and bay leaves; stir in vinegar and parsley. Spoon into serving bowls; top with sour cream.
