Lychee Martini
The slightly cloudy Lychee Vodka makes the base for this tropical-looking, easy-to-drink martini. When making the base, reserve enough lychees for garnish if you want, and keep in mind that the longer the vodka mix rests, the better the flavour.

splash club soda
1 drained canned lychee, (optional)

- Lychee Vodka:
1 can (20 oz/530 mL) whole lychees in syrup
1-1/2 cups (375 mL) vodka
Drain lychees, reserving 2/3 cup (150 mL) liquid. In bowl and using potato masher, coarsely mash lychees; transfer to clean jar. Pour in reserved liquid and vodka; seal and store in cool dark place for 24 hours. (Make-ahead: Store for up to 1 month.)
Makes 3 cups (750 mL).
