Mango Chicken Salad Wraps

The sweetness of mango offsets the spiciness of jerk seasoning and wraps up everyday chicken salad with an appealing new look and taste.

Ingredients

    1 tbsp (15 mL) jerk seasoning
    1 tbsp (15 mL) vegetable_oil
    2 boneless skinless chicken breasts
    1 cup (250 mL) shredded lettuce
    1 mango, peeled, pitted and diced
    Half sweet red pepper, diced
    1/4 cup (50 mL) light mayonnaise
    1/4 tsp (1 mL) grated lime rind
    1 tbsp (15 mL) lime juice
    4 large flour tortillas

Preparation

In bowl, whisk jerk seasoning with oil; add chicken and turn to coat. Place on foil-lined rimmed baking sheet; broil, turning once, for about 12 minutes or until no longer pink inside. Let cool slightly; cut into thin strips.

In large bowl, toss together chicken, lettuce, mango, red pepper, mayonnaise and lime rind and juice. Divide among tortillas, placing in centre of each. Fold 2 sides over filling; roll up from end.
