Make these patties for a Christmas-dinner change. You can add 2 tbsp (25 mL) of crumbled bacon bits, goat cheese or grated Parmesan to the potato mixture.

Ingredients

  • 1/2 recipe Make-Ahead Mashed Potatoes Recipe
  • 1 egg
  • 3 cup toasted fresh bread crumbs
  • 1/4 cup minced fresh parsley

Preparation

Make the Make-Ahead Mashed Potatoes; let cool.

In large bowl, mix together potatoes, egg and 1cup (250 mL) bread crumbs. Shape by 1/3 cupfuls (75 mL) into 1/2-inch (1 cm) thick patties.

In shallow bowl, combine 2 cups (500 mL) bread crumbs with parsley. Press patties into mixture to coat all over. Place on greased baking sheet. (Make-ahead: Cover and refrigerate for up to 24 hours.)

Bake in 400°F (200°C) oven, turning once, until crisp, about 10 minutes.
