No bird? No problem. All you need is 15 minutes and a handful of basic ingredients (no turkey roasting required!) to make this broth-based gravy, which gets its thick, velvety texture from
whipped cream.

Ingredients

  • 1 tablespoon butter
  • 3 cloves garlic , minced
  • 2 teaspoons chopped fresh thyme
  • 2 cups sodium-reduced chicken broth
  • 1/3 cup whipping cream (35%)
  • 2 teaspoons grainy mustard
  • 1/4 teaspoon pepper
  • pinch salt
  • 3 tablespoons cornstarch

Method

In saucepan, heat butter over medium-high heat until melted; cook garlic and thyme, stirring, until fragrant, about 1 minute. Pour in broth; bring to simmer and cook until slightly reduced, about 5 minutes. Stir in cream, mustard, pepper and salt. Whisk cornstarch with 3 tbsp water; add to broth mixture and cook, stirring, until thickened, about 1 minute.

Makes about 2-1/2 cups.
