Beef and Mushroom Family Sandwich

2 tsp (10 mL) vegetable oil
1 lb (500 g) inside round beef fast-fry steak, cut into thin strips
1 onion, sliced
3 cups (750 mL) sliced mushrooms
3 cloves garlic, minced
1 sweet yellow pepper, sliced
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) each salt and pepper
1 baguette
1 jar (6 oz/170 mL) marinated artichokes, drained
Preparation:
In large nonstick skillet, heat oil over medium-high heat; stir-fry beef, in batches, until browned but still pink inside, about 3 minutes. Transfer to plate.
Add onion, mushrooms, garlic, yellow pepper, oregano, salt and pepper to skillet; sauté until liquid is evaporated, about 5 minutes. Return beef and any accumulated juices to pan; heat through.
Cut baguette lengthwise in half almost but not all the way through. If desired, remove some of the centre.
Spoon half of the beef mixture on bottom of loaf. Top with artichokes and remaining beef mixture. Cover with top of loaf. Cut into sections.
