Making the grade: Eggs explained
• Grade A Jumbo, Extra Large, Large, Medium, Small and Pee Wee eggs are determined by the weight, not the physical size of the egg.
• During the grading process, an egg is passed over a strong light so the inside can be examined. This process is called candling and allows graders to see through the shell to check the interior for cracks or flaws. Years ago eggs were held up to the flame of a candle for checking.
• Don't be fooled by the colour of eggshells. Colour is not related to quality, flavour or nutritional value. The breed of hen determines the colour of the eggshell.
• Eggs with a visible blood spot on the yolk are suitable for consumption. The spot can be removed with the tip of a knife, if desired.
