Canned tomatoes: Why they're good for you, plus 10 homemade recipes

Getting enough vegetables in your diet can be tricky at the best of times. Making sure that canned tomatoes are one of your pantry must-haves is an easy way to ensure that you're getting what you need.
Why they're good for you:
This nutritious fruit is a source of vitamins A and C, iron and magnesium. Canned tomatoes are also rich in lycopene, a cancer-fighting antioxidant.
Storage:
Once opened, store tomatoes in an airtight container (not in the can) in the refrigerator for up to one week, or in the freezer for several months.
Uses:
Canned tomatoes are now available whole, diced, crushed, pureed, seasoned with herbs and with no added salt. And since they're the basis for so many of our favourite recipes -- stews, soups, chilis, casseroles and sauces -- canned tomatoes are definitely one of the Test Kitchen's favourite pantry staples.
