Made in Canada
July 1 is the day to appreciate how fortunate we are to call Canada our culinary home. From sea to sea to sea, we shop at a lavishly provisioned store and from it set a pretty fine table.
This multitude of blessings is what got The Canadian Living Test Kitchen into a tizzy of excitement as we contemplated celebrating July 1 with recipes featuring our finest homegrown ingredients. But what to choose? And how to set the limits... (continued below right)

Is salmon too obvious for British Columbia? Beef a given for Alberta? If we choose pork for Ontario, what about the other provinces where pork is equally delicious? Does Quebec get the honours for cheese? Which of the Atlantic provinces best features lobster? Ditto blueberries? So we researched, calling experts and contacts and surfing the Web for statistics. We did enough digging to establish the broad strokes, but not so much that we couldn't exercise our personal preferences for ingredients we've tasted travelling the country. We reconvened to narrow the list. The recipes that follow come from our passionate discussion.
