Smoked Trout Spread
Pack flatbreads, crackers or vegetables to enjoy with this patélike spread once you arrive at your destination.

10 oz (300 g) skinless boneless smoked trout
4 oz (125 g) light cream cheese, softened
3 tbsp (50 mL) light mayonnaise
1 tbsp (15 mL) prepared horseradish
2 tsp (10 mL) lemon juice
Pinch each salt and cayenne pepper
1/4 cup (50 mL) minced green onions
Preparation:
In food processor, blend trout, cheese, mayonnaise, horseradish, lemon juice, salt and cayenne pepper until smooth. Add all but 2 tsp (10 mL) of the green onions; pulse just until blended. (Make-ahead: Refrigerate in airtight container for up to 2 days.)
Scrape into serving dish; garnish with remaining green onions.
