What does tamari taste like?
Made from soybeans, tamari is traditionally darker and has a richer taste than soy sauce, but the two are often interchangeable in recipes. Although both are very high in sodium, these sauces don’t just add saltiness; they’re also loaded with umami – the savouriness associated with meat, cheese and slow-cooked food. Tamari has a strong flavour, so a little bit goes a long way.
Why we love tamari in recipes
Tamari has almost the same flavour profile as soy sauce but is traditionally made without wheat, so it’s often available gluten-free. As usual, when cooking for anyone with a food intolerance or allergy, check labels carefully.
How to store tamari
Tightly sealed and stored in a cool dark place, tamari and soy sauce will keep for many months without losing flavour. To retain the flavour even longer, store them in the fridge.
