Cooking the potatoes in the microwave makes for faster grilling later. Or you can cook them in a pot of boiling salted water until tender, about 10 minutes.

Ingredients

  • 8 small red potatoes, (about 1 lb/500 g)
  • 2 tbsp chopped fresh basil
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Scrub potatoes and cut in half; place in microwaveable dish. Sprinkle with 2 tbsp (25 mL) water; cover and microwave at High until tender, about 8 minutes. Sprinkle with basil, oil, salt and pepper; stir to coat.

Thread potatoes onto skewers. Place on greased grill over medium-high heat; close lid and grill, turning occasionally, until crisp and golden, about 10 minutes.
