This elegant fruit salad gets a palate-pleasing lift from mint. As well as being a low-sugar and calorie-wise dessert, it's also brimming with vitamin C.

Ingredients

  • 1/2 honey dew melon
  • 1 red grapefruit
  • 1 tbsp granulated sugar
  • 1 tbsp lime juice
  • 1/2 cup blackberries
  • 2 tsp shredded mint leaves

Preparation

Scrape out seeds from melon. Cut into 8 wedges; cut off skin. Set aside.

Cut rind and outer membrane from grapefruit. Over bowl, cut between membrane and pulp to release fruit into bowl, squeezing membranes to extract juice. Whisk sugar and lime juice into bowl. Stir in blackberries and half of the mint.

Arrange melon and grapefruit sections on plates; spoon blackberry mixture over top. Sprinkle with remaining mint.
