Minty Melon Salsa is a natural partner for leg of lamb or lamb chops.
Ingredients
- 1 tsp grated lime rind 1 1tsp tspgrated lime rind
- 1/4 cup lime juice 1/4 1/4cup cuplime juice
- 2 tbsp liquid honey 2 2tbsp tbspliquid honey
- 2 cups chopped peeled honeydew melon 2 2cups cupschopped peeled honeydew melonshoneydew melon or cantaloupes
- 1/4 small red onion , diced1/4 1/4small red onion, diced
- 2 tbsp chopped fresh mint 2 2tbsp tbspchopped fresh mint
Preparation
In large bowl, whisk together lime rind, lime juice and honey.
Stir in honeydew melon or cantaloupe, red onion and mint. Let stand for 20 minutes.
