Minty Melon Salsa
Minty Melon Salsa is a natural partner for leg of lamb or lamb chops.
Servings: 2 to 4 cups (500 mL to 1 L)
Ingredients:

1 tsp (5 mL) grated lime rind
1/4 cup (50 mL) lime juice
2 tbsp (25 mL) liquid honey
2 cups (500 mL) chopped peeled honeydew melon or cantaloupe
Quarter small red onion, diced
2 tbsp (25 mL) chopped fresh mint
Preparation:
In large bowl, whisk together lime rind, lime juice and honey.
Stir in honeydew melon or cantaloupe, red onion and mint. Let stand for 20 minutes.
