Mixed Green Salad With Strawberry Salsa

This pretty, colourful, ultra-fresh salad makes a great side dish or light lunch. When choosing strawberries, let your nose be your guide—the sweetest strawberries always smell lovely and fragrant.

Ingredients

  • 12 cups 12cupstorn green and/or red leaf lettuce
  • 1/3 cup 1/3cupsliced almonds, toasted

White Balsamic and Honey Dressing:

  • 1/4 cup 1/4cupextra-virgin olive oil
  • 3 tbsp 3tbspwhite balsamic vinegar
  • 4 tsp 4tspDijon mustard
  • 1 tbsp 1tbspliquid honey
  • 1 1clove garliccloves of garlic, minced
  • Pinch Pincheach salt and pepper

Strawberry Salsa:

  • 2 cups 2cupsquartered hulled strawberrystrawberries
  • 1/3 cup 1/3cupthinly sliced spring bulb onion
  • 1 1jalapeño pepperjalapeño peppers, seeded and finely diced
  • 4 tsp 4tspwhite balsamic vinegar
  • Pinch Pincheach salt and pepper

Preparation

Strawberry Salsa: Stir together strawberries, onions, jalapeño pepper, vinegar, salt and pepper. Let stand for 5 minutes.

White Balsamic and Honey Dressing: Meanwhile, in small glass measure, whisk together oil, vinegar, mustard, honey, garlic, salt and pepper until well combined. In large bowl, toss lettuce with dressing to coat. Top with strawberry salsa; sprinkle with almonds.
