Mixed Greens with Chive Vinaigrette
Light and springy, this fresh salad is the perfect complement to the crêpes.

8 cups (2 L) torn mixed greens
1 cup (250 mL) thinly sliced radishes
Vinaigrette:
1/4 cup (50 mL) vegetable oil
2 tbsp (25 mL) chopped fresh chives or green onions
2 tbsp (25 mL) white wine vinegar
1/2 tsp (2 mL) Dijon mustard
1/4 tsp (1 mL) each salt and pepper
1/4 tsp (1 mL) dried tarragon or thyme
Preparation:
Vinaigrette: In small bowl, whisk together oil, chives, vinegar, mustard, salt, pepper and tarragon. (Make-ahead: Cover and set aside for up to 2 hours; whisk to emulsify.)
In large bowl, toss greens with radishes; pour vinaigrette over top and toss to coat.
