Light and springy, this fresh salad is the perfect complement to the crepes.

Ingredients

    8 cups (2 L) torn mixed greens
    1 cup (250 mL) thinly sliced radishes
    Vinaigrette:
    1/4 cup (50 mL) vegetable_oil
    2 tbsp (25 mL) chopped fresh chives or green_onions
    2 tbsp (25 mL) white_wine_vinegar
    1/2 tsp (2 mL) Dijon_mustard
    1/4 tsp (1 mL) each salt and pepper
    1/4 tsp (1 mL) dried tarragon or thyme

Preparation

Vinaigrette: In small bowl, whisk together oil, chives, vinegar, mustard, salt, pepper and tarragon. (Make-ahead: Cover and set aside for up to 2 hours; whisk to emulsify.)

In large bowl, toss greens with radishes; pour vinaigrette over top and toss to coat.
