Mixed Greens with Pine Nuts and Mustard Dressing

With piquant cheese, tender toasted pine nuts and crunchy, crisp greens, this salad is simple yet pleasing.

Preparation:

Mustard Dressing: In small bowl, whisk together oil, vinegar, mustard, rosemary, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)

In large bowl, combine greens, onion and pine nuts; pour dressing over top and toss to coat. Sprinkle with cheese.

Additional Information

  • Tip: Toast pine nuts in toaster oven or in dry skillet over medium heat.
