With piquant cheese, tender toasted pine nuts and crunchy, crisp greens, this salad is simple yet pleasing.

Ingredients

  • 8 cups torn mixed salad greens.php">greens
  • 1/2 red onion, thinly sliced
  • 1/2 cup toasted pine nuts
  • 1/2 cup crumbled blue cheese
  • Mustard Dressing:
  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp grainy mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried salt
  • 1/4 tsp dried pepper

Preparation

Mustard Dressing: In small bowl, whisk together oil, vinegar, mustard, rosemary, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)

In large bowl, combine greens, onion and pine nuts; pour dressing over top and toss to coat. Sprinkle with cheese.

Additional information :

Tip: Toast pine nuts in toaster oven or in dry skillet over medium heat.
