With piquant cheese, tender toasted pine nuts and crunchy, crisp greens, this salad is simple yet pleasing.
Ingredients
- 8 cups torn mixed salad greens 8 8cups cupstorn mixed salad greens.php">greens
- 1/2 red onion , thinly sliced1/2 1/2red onionred onions, thinly sliced
- 1/2 cup toasted pine nuts 1/2 1/2cup cuptoasted pine nutpine nuts
- 1/2 cup crumbled blue cheese 1/2 1/2cup cupcrumbled blue cheese
- Mustard Dressing:
- 2 tbsp extra virgin olive oil 2 2tbsp tbspextra virgin olive oil
- 2 tbsp red wine vinegar 2 2tbsp tbspred wine vinegar
- 1 tbsp grainy mustard 1 1tbsp tbspgrainy mustard
- 1/4 tsp dried rosemary 1/4 1/4tsp tspdried rosemary
- 1/4 tsp dried salt 1/4 1/4tsp tspdried salt
- 1/4 tsp dried pepper 1/4 1/4tsp tspdried pepper
Preparation
Mustard Dressing: In small bowl, whisk together oil, vinegar, mustard, rosemary, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)
In large bowl, combine greens, onion and pine nuts; pour dressing over top and toss to coat. Sprinkle with cheese.
Additional information :
Tip: Toast pine nuts in toaster oven or in dry skillet over medium heat.
