8 cups (2 L) torn mixed salad greens
Half red onion, thinly sliced
1/2 cup (125 mL) toasted pine nuts
1/2 cup (125 mL) crumbled blue cheese
Mustard Dressing:
2 tbsp (25 mL) extra-virgin olive oil
2 tbsp (25 mL) red_wine_vinegar
1 tbsp (15 mL) grainy mustard
1/4 tsp (1 mL) each dried rosemary, salt and pepper
Preparation:
Mustard Dressing: In small bowl, whisk together oil, vinegar, mustard, rosemary, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)
In large bowl, combine greens, onion and pine nuts; pour dressing over top and toss to coat. Sprinkle with cheese.
