Everyone can enjoy these light, healthy meals from the King Ranch Health Spa & Fitness Resort

Ingredients

  • 1 9-inch (23 cm) pita bread
  • 1 tbsp chevre, (cream goat_cheese)
  • 3 tbsp tomato sauce
  • 2 tomatoes, sliced
  • 2 mushrooms, sliced
  • 2 tsp chopped fresh basil
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 tsp freshly grated parmesan cheese

Preparation

Place pita bread on baking sheet. Spread with goat cheese; spoon on tomato sauce. Cover with tomato and mushroom slices; sprinkle with basil. Sprinkle with mozzarella and Parmesan cheeses. Bake in 475°F (240°C) oven for about 10 minutes or until cheese is bubbling and crust is browned.
