Mushrooms in Riesling

Serve this simple but flavourful appetizer with toothpicks before you sit down at the table.

Ingredients

  • 3 tbsp 3tbspbutter
  • 1/3 cup 1/3cupfinely diced shallotshallots
  • 1 lb 1lbbutton mushroombutton mushrooms, trimmed
  • 1 tsp 1tspchopped fresh thyme, (or 1/4 tsp/ 1 mL dried)
  • 1/4 1/4salt
  • 1/4 tsp 1/4tsppepper
  • 1/8 tsp 1/8tspcayenne pepper
  • 1/2 cup 1/2cupriesling wine

Preparation

In large skillet, heat butter over medium heat; cook shallots for 3 minutes. Stir in mushrooms, thyme, salt, pepper and cayenne pepper; cook until richly browned, about 5 minutes.

Pour in wine; bring to boil. Reduce heat and simmer, stirring, until no liquid remains, about 5 minutes. Serve warm.
