Ingredients

  • 1 tbsp olive oil
  • 2-1/2 lb mild Italian sausages, cut_into chunks
  • 2 red onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp paprika
  • 1/4 tsp hot pepper flakes
  • 1 cup tomato juice
  • 3/4 cup dry red wine
  • 2-1/2 lb mussels
  • 1/4 cup sliced green onions

Preparation

In Dutch oven, heat oil over medium-high heat; brown sausage, in batches. Transfer to plate. Drain fat from pan. Add red onions, garlic, paprika and hot pepper flakes; cook for 5 minutes or until softened. Pour in tomato juice and wine; bring to boil. Return sausage to pan; reduce heat, cover and simmer for 45 minutes.

Meanwhile, scrub mussels under running water; trim off any beards. Discard any with cracked shells and any that do not close when tapped. Add mussels to pan; cook, covered, for 12 minutes or until mussels open. Discard any that do not open. Serve sprinkled with green onions.
