No-Fry Crispy Coating Mix
For anyone who loves fried chicken, this flavourful Italian blend of herbs is a great low-fat alternative. It's also tasty on pork chops.
Servings: 6 cups
Ingredients:

4-1/2 cups (1.125 L) fine dried bread crumbs
3/4 cup (175 mL) dried parsley
1/2 cup (125 mL) all-purpose flour
1/2 cup (125 mL) dried basil
2 tbsp (25 mL) each paprika, onion powder, dried thyme, rosemary and oregano
2 tsp (10 mL) each salt, pepper and garlic powder
Preparation:
In airtight container, combine crumbs, parsley, flour, basil, paprika, onion powder, thyme, rosemary, oregano, salt, pepper and garlic powder.
Stir well before using.

No Fry Crispy-Coated Chicken:
Dip 3 lb (1.5 kg) chicken parts into 1/2 cup (125 mL) buttermilk, then into 1 cup (250 mL) Mix. Bake in greased baking dish in 400°F (200°C) oven for 40 minutes, turning once, or until brown and juices run clear.
