Ingredients

  • 2-1/2 cups crushed Strawberries
  • 1 tbsp lemon juice
  • 7 tsp low-calorie sweetener, (or to taste)
  • 1 box light pectin crystals

Preparation

In large bowl, stir strawberries with lemon juice. Add low-calorie sweetener. Mix in light pectin crystals; let stand for 30 minutes, stirring occasionally.

Pour into clean airtight containers, leaving 1/4-inch (5 mm) headspace. Let stand undisturbed for 24 hours or until set. Store in refrigerator for up to 3 weeks or freeze for up to 8 months.
