    2-1/2 cups (625 mL) crushed strawberries
    1 tbsp (15 mL) lemon juice
    7 tsp (35 mL) low-calorie sweetener (or to taste)
    1 box (49 g) light pectin crystals

Preparation:

In large bowl, stir strawberries with lemon juice. Add low-calorie sweetener. Mix in light pectin crystals; let stand for 30 minutes, stirring occasionally.

Pour into clean airtight containers, leaving 1/4-inch (5 mm) headspace. Let stand undisturbed for 24 hours or until set. Store in refrigerator for up to 3 weeks or freeze for up to 8 months.
