Over the last few years, growers and buyers alike are rediscovering potatoes. This is no more apparent than at the market when potato farmers show off their jewels.

Ingredients

  • 2 or 3 potatoes, of each variety (red skinned, or blue, yellow or spotted)
  • Drizzle of Olive oil, or melted butter
  • 1 small dish sea salt
  • 1 small dish pepper

Preparation

Buy a few of each variety – red-skinned or blue, yellow or spotted. Once home, treat them to a simple boil and drizzle of olive oil or melted butter. Serve with a small dish of your favourite sea salt and a pepper grinder for guests to savour their spuds as they wish.
