Onion and Potato Pizza
Golden onions and potatoes make a flavourful combination.

2 potatoes
2 tbsp (25 mL) olive oil
2 cloves garlic, minced
1 red onion, sliced
2 tsp (10 mL) dried rosemary, crumbled
3 tbsp (50 mL) freshly grated parmesan cheese
1 Healthy Processor pizza Base
Pinch salt and pepper
Preparation:
In pot of boiling water, cook potatoes for 10 minutes or until almost tender but still firm. Slice thinly; set aside.
Meanwhile, in skillet, heat oil over medium heat; add garlic, onion and rosemary. Cook, stirring occasionally, for 15 minutes or until golden.
Sprinkle 1 tbsp (15 mL) of the Parmesan over pizza base on nonstick baking sheet or perforated pizza pan. Arrange potatoes on top, overlapping slightly. Top with onion mixture. Season with salt and pepper. Sprinkle with remaining Parmesan. Bake in 500°F (260°C) oven for 12 to 15 minutes or until crust is crisp.
