Ingredients
- 2-2/3 cups chicken stock 2-2/3 2-2/3cups cupschicken stock
- 1-1/2 tsp grated orange rind 1-1/2 1-1/2tsp tspgrated orange rind
- 1/4 tsp each of salt and pepper 1/4 1/4tsp tspeach of salt and pepper
- 1-1/3 cups rice 1-1/3 1-1/3cups cupsrice
- 1 large carrot , grated1 1large carrotcarrots, grated
Preparation
In saucepan, bring chicken stock, orange rind, salt and pepper to boil; stir in rice and carrot. Cover, reduce heat and simmer until rice is tender and liquid is absorbed, 25 minutes. Fluff with fork.
