Oregano Pork Kabobs

Ingredients:

1 pork tenderloin
2 tbsp (25 mL) extra-virgin olive oil
1 tsp (5 mL) grated lemon rind
2 tbsp (25 mL) lemon juice
1 tsp (5 mL) dried oregano
2 cloves garlic, minced
1/4 tsp (1 mL) each salt and pepper
Preparation:
Cut pork tenderloin into 1-inch (2.5 cm) cubes; place in bowl. Add olive oil, lemon rind lemon juice, oregano, garlic, salt and pepper. Thread onto 8 metal skewers. Place on greased grill over medium-high heat; brush with any remaining marinade. Close lid and grill, turning once, until just a hint of pink remains inside, 10 minutes.
