Irish food often takes a variety of humble ingredients and transforms them into rich, flavourful meals. As with Italian food, though, when the recipes only involve a few ingredients, their flavours are really going to shine, so it's important to make sure you're choosing the highest quality ingredients you can find. The dishes below have been tested till perfect by our test kitchen, so you won't even need the luck of the Irish on your side when making them!

1. Irish Red Ale, Cheddar and Potato Soup

null Irish red ale, named for the hue that results from adding roasted barley during brewing, lends a slightly sweet, toasted malt flavour to this update on traditional potato soup. Mature Irish Cheddar gives it a rich, sharp finish. 
null Irish Soda Bread is a great introduction to bread-making for novice bakers—there's no fussing with yeast! Out of the oven, the top is super crispy and the soft inside tastes yummy slathered with butter.
null This updated take on colcannon (traditionally made with white potatoes) gets a nutrient boost from kale and swaps in cauliflower for some of the potatoes, substantially lightening up the mash. It's a great way to boost the health factor of this traditional dish without sacrificing any of the flavour!
