Pan-Roasted Garlic Toasts

Ingredients:

Toasts
French_stick (baguette)
1 tbsp (15 mL) olive oil
Topping
8 cloves (unpeeled) garlic
2 tsp (10 mL) olive oil
1/4 cup (50 mL) light mayonnaise
1 tbsp (15 mL) chopped fresh parsley
pinch each salt and pepper
Preparation:
Toasts
Cut French stick into twelve 1/2-inch (1 cm) thick slices; brush with olive oil. Place, oiled side down, on grill over medium heat; close lid and grill for 3 to 5 minutes or until toasted. Top with the following.
Topping
In saucepan, cover and cook garlic in olive oil over medium heat, shaking pan, for 15 to 20 minutes or until very soft. Remove from oil; let cool. Squeeze out pulp into bowl; mash with fork. Stir in light mayonnaise, parsley, salt and pepper.
