FOLATE-RICH Smoked turkey sausage is lighter than other sausages but is still high in flavour. Look for it in the grocer's deli.

Ingredients

  • 1 onion, chopped
  • 2 smoked turkey sausages, chopped (8 oz/250 g)
  • 1-1/2 cups chunky vegetable pasta sauce
  • 4 cups rigatoni pasta
  • 4 cups fresh spinach, trimmed and chopped

Preparation

In skillet, heat 2 tsp (10 mL) oil over medium-high heat; cook onion, stirring often, for 5 minutes or until softened. Add sausage; cook, stirring often, for 5 minutes or just until starting to brown. Stir in sauce; simmer for 10 minutes.

Meanwhile, in large pot of boiling salted water, cook pasta for about 10 minutes or until tender but firm. Add spinach and drain well, reserving 1/2 cup (125 mL) cooking liquid; return to pot. Stir in sauce and enough of the reserved liquid to coat pasta.
