For anyone who is lactose intolerant, this creamy breakfast drink features soy milk and silken tofu.
Ingredients
- 2-1/2 cups soy milk 2-1/2 2-1/2cups cupssoy milk
- 2 cups frozen sliced peeled peaches 2 2cups cupsfrozen sliced peeled peachpeaches
- 1/2 cup cubed soft (silken) tofu 1/2 1/2cup cupcubed soft (silken) tofu
- 4 tsp liquid honey 4 4tsp tspliquid honey
- 1 tsp lemon juice 1 1tsp tsplemon juice
Preparation
In blender, pur?together soy milk, peaches, tofu, honey and lemon juice until smooth.

Variation
Peaches and Cream Smoothie: Omit soy milk; use 1-1/2 cups (375 mL) milk. Replace tofu with vanilla yogurt.
