Colourful and crunchy, this flavourful salad gets its Asian influence from the ginger soy dressing and crispy fried noodles.

Ingredients

  • 8 cups torn leaf lettuce or boston lettuce
  • 1 cup fried noodles
  • 1 can (284 mL) mandarin orange sections, drained
  • 1/2 cup salted peanuts
  • 2 tbsp sesame seeds, toasted
  • 1 tbsp chopped fresh coriander
  • Dressing:
  • 2 tbsp vegetable oil
  • 2 tbsp rice vinegar
  • 4 tsp soy sauce
  • 1 tsp grated gingerroot
  • 1 clove garlic, minced
  • 1/4 tsp pepper

Preparation

Dressing: In small bowl, whisk together oil, vinegar, soy sauce, ginger, garlic and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)

In large bowl, combine lettuce, noodles, orange segments, peanuts and sesame seeds. Pour dressing over top and toss to coat. Sprinkle with coriander.
