2 sheets phyllo pastry
2 tbsp (25 mL) butter, melted
1 round (8 oz/230 g) Brie cheese
2 tbsp (25 mL) red pepper jelly
Preparation:
Lay 1 sheet of phyllo on work surface; brush lightly with some of the butter. Top with second phyllo sheet; brush lightly with some of the butter.
Place Brie in centre of phyllo; gather up edges to create flowerlike cluster on top, squeezing slightly to hold together. Place on parchment paper-lined or greased baking sheet; brush all over with remaining butter. (Make-ahead: Cover and refrigerate for up to 3 days.)
Bake in 350°F (180°C) oven until golden and crisp, about 15 minutes. Meanwhile, in small saucepan or microwaveable dish, melt jelly. Place phyllo-wrapped Brie on serving plate; pool melted jelly around Brie.
